Relocated to London amid the COVID-19 pandemic to pursue gastronomy career and joined Bridge Baker, Fulham’s beloved independent bakery and pizzeria (founded 2019, known for artisan bread, pastries, and award-winning slow-fermented pizzas using fresh, local ingredients from top suppliers).
Operated in a compact, garage-style take-away setup on a small street, focusing on 100% Italian signature pizzas made with high-quality, seasonal produce. Worked evening and night shifts (Wednesday to Sunday) in a tight-knit team of 3: prepared mise en place before opening, assisted the pizzaiolo in dough handling and topping, heated pizzas to perfection, packaged for take-away, and supported smooth high-demand service during the height of pandemic restrictions.
Contributed to the business’s strong local popularity and resilience in one of the toughest periods for hospitality. This role deepened appreciation for authentic Italian pizza craftsmanship and fresh, ingredient-driven cooking.
The funny duties
- Pizza Preparation & Mise en Place – Set up ingredients, dough, and stations for efficient evening pizza production using fresh, local Italian-style components.
- Assisting Pizzaiolo & Oven Operations – Supported the lead pizzaiolo in assembling, heating, and perfecting signature slow-fermented pizzas for consistent quality.
- High-Volume Take-Away Service – Handled packaging, customer orders, and quick service in a busy pandemic-era take-away environment.
